
We’re pleased to offer premium beef raised right here on our family farm. Our cows are raised on grass, hay, and finished on grain to ensure quality, flavor, and tenderness. We utilize Sprankles Butchers for processing, and they are happy to assist with any questions regarding specific cuts. All meat is packaged in plastic and butcher paper.
Available Options: Whole, Half or Quarter Beef
Pricing: $4.50/pound hanging weight* + processing fees**
*(Hanging weight is the final weight before the beef is butchered into various cuts)

Harvest Fee -$120.00 Dirty Cattle – $20.00 Waste Disposal – $30.00) – Please note, the cost is divided proportionally for half or quarter beef.
When filling out your cut sheet, please list Joe Sampson as your farmer and circle your preferred beef split: Half or Quarter. All weights are estimated, and actual weights may vary depending on customization.
Beef Yield & Storage Recommendations
Whole Beef:
- Hanging weight: 600-650 pounds
- Take-home meat: 500-550 pounds
- Freezer space needed: Approx. 20 cubic feet
- This option includes brisket, roasts, steaks, ribs, ground beef, other cuts, and bones.
Half Beef:
- Hanging weight: 300-350 pounds
- Take-home meat: 200-250 pounds
- Freezer space needed: Approx. 11 cubic feet
- This provides roughly a year’s worth of meat for a family of four and includes brisket, roasts, steaks, ribs, ground beef, and more.
Quarter Beef:
- Hanging weight: 200-250 pounds
- Take-home meat: 100-150 pounds
- Freezer space needed: Approx. 4 cubic feet
- The quarter beef comes with a mix of cuts from both the front and hind quarters, including chuck steaks, pot roasts, rib steaks, short ribs, ground beef, and soup bones.
Pick-Up Instructions:
Before your pick-up date, we will contact you to finalize your cost based on hanging weight. On pick-up day, please expect to pay the final cost for processing fees. Sprankles Butchers will provide baskets for your meat, but they must be returned. For your convenience, you are welcome to bring boxes, baskets, or coolers for easier transport.
