
We are pleased to offer premium beef raised right here on our family farm. Our cows are raised on pasture, hay, and finished on grain to ensure quality, flavor, and tenderness. We utilize Sprankles Butchers for processing, and they are happy to assist with any questions regarding specific cuts. All meat is packaged in plastic and butcher paper.
Beef Shares: Whole, Half or Quarter Beef
Price – $4.50 per pound of hanging weight*
Processing Fees: Additional fees apply (see below)
What is Hanging Weight?
Hanging weight is the weight of the animal after harvest and before it is butchered into individual cuts. Your beef share price is based on this hanging weight, not the final package weight you take home.
Because bones, fat trimming, and moisture loss occur during processing, the amount of packaged meat you receive will be less than the hanging weight.
Example:
- Hanging Weight: 600 lbs
- Beef Cost: 600 lbs × $4.50 = $2,700 + Processing Fees
- Estimated Take-Home Meat: 500–550 lbs
Processing Fees
The following fees are charged by the processor and due at pick-up:
For half and quarter beef shares, the harvest, dirty and waste disposal fees are divided proportionally based on your share size.
- Cut, wrap and freeze –$0.90 per lb. of hanging weight.
- Hamburger Patties (optional) – $0.50 per lb.
- Harvest Fee -$120.00
- Dirty Cattle Fee (if applicable) – $20.00.
- Waste Disposal – $30.00
When completing your cut sheet, please list Joe Sampson as your farmer and circle your preferred beef split: Whole, Half or Quarter. Choose your preferred cutting and packaging options. All weights are estimated, and actual weights may vary depending on customization.
Beef Yield & Freezer Space Guide
Whole Beef:
- Estimated Hanging weight: 600-650 lbs
- Estimated Take-home meat: 500-550 lbs
- Recommended Freezer space needed: Approximately 20 cubic feet. Includes a variety of cuts such as brisket, roasts, steaks, ribs, ground beef, other cuts, and bones.
Half Beef:
- Estimated Hanging weight: 300-350 lbs
- Estimated Take-home meat: 200-250 lbs
- Freezer space needed: Approximately 11 cubic feet. Includes steaks, roasts, brisket, ribs, ground beef, and other premium cuts. Typically provides about a year’s worth of beef for a family of four.
Quarter Beef:
- Estimated Hanging weight: 150-175 lbs
- Estimated Take-home meat: 100-150 lbs
- Recommended Freezer space needed: Approximately 4 cubic feet. Includes a balanced assortment of cuts from both the front and hind portions of the animal, including chuck steaks, ribs steaks, roasts, short ribs, ground beef, and soup bones.
Pick-Up & Final Payment
Once your animal has been processed, we will contact you with the final hanging weight and calculate your total beef cost.
Your final balance will include:
- Beef cost based on hanging weight ($4.50/lb)
- Applicable processing fees
- Any optional processing selections.
Pick-up will take place at Sprankles Butchers, they do provide baskets for your meat, but they must be returned. For your convenience, you are encouraged to bring boxes, baskets, or coolers for easier transport.
